The Southern Extension Risk Management Education Center (SRMEC) at the University of Arkansas Cooperative Extension Service (UACES) leverages expertise from the Center's faculty/staff and diverse advisory council to help farmers and ranchers make informed risk management decisions. SRMEC intentionally builds and maintains relationships across the region with public and private agricultural industry stakeholders. The Center's mission is to empower the strengths and skills of individuals in the Southern region who are involved in the management of agricultural production, marketing, financial, legal, and human risks. SRMEC strives to improve farmer and rancher abilities to manage risk and increase profitability of enterprise by funding programs designed to change risk management behavior among key producer populations. Our ultimate goal is to deliver educational programs and resources that enable farmers and ranchers to make practical decisions. SRMEC activities empower producers to manage risks and evaluate the impacts of those managerial decisions.The projectseeks to leverage public investments in meat and poultry processing to enhance the food processing system's competitiveness and resiliency. By increasing the value to growers, processing workers, and consumers, the effort seeks to support the performance of small/medium sized processors;meat & poultry producers; and local and regional food systems. This effort hopes to expand opportunities for small and medium sized processors and farmers/ranchers to understand strategies to compete in this competitive market landscape. Through enhanced understanding of the risk environment and strategic engagements to adjust, the effort hopes to enhanceprocessing capacity, sector resilience, and the economic performance of the processing entities and farmers/ranchers,This projects overarching goal is to increase independent meat and poultry processing capacity by strategically enhancing the diversity of size and location of sector partiipants therby enhancing the sectors performance and resiliency.

Goals / Objectives
The project seeks to leverage public investments in meat and poultry processing to enhance the food processing system's competitiveness and resiliency. By increasing the value to growers, processing workers, and consumers, the proposed effort also seeks to support the performance of local and regional food systems. This projects overarching goal is to increase independent meat and poultry processing capacity and understanding of current trends in meat processing sector focuedon small- and mid-sized processor capacity and resilience.. Project goals are to identify and fund extension projects that address one or more of the following areas:Support informal education to increase meat and poultry processing literacy among youth and adults;Promote science-based agricultural literacy by increasing understanding and use of food and agricultural science data, information, and programs;Build science-based capability in people to engage audiences and enable informed decision making;Develop new applications of instructional tools and curriculum structures that increase technical competency and ensure global competitiveness and supply chain resilience;Offer non-formal learning programs that increase accessibility to new audiences at the rate at which new ideas and technologies are tested and/or developed at the community-scale; andDevelop programs that increase public knowledge and citizen engagement leading to actions that protect or enhance the nations' meat and poultry supply, food safety, environmental quality, community vitality, and/or public health and well-being.
Project Methods
SRMEC's primary purpose is to successfully management of the Extension Risk Management Education (ERME)competitive grants--meat and poultry processing) program--and outreachactivities. The targeted SRMEC engagements seek to build capacity and resiliency across the meat and poultry processing sector with a focus on small/medium sized operations. Each funded project includes a detailed plan of work addressing programpromotion, delivery and evaluation. Each project will report programmatic outcomes and impacts along with using aretrospective evaluation framework to document change in knowledge of project participants. Education methods include lecture, presentation, hands-on training, demonstration. Engagement and dissemination activities include conference presenations, staffed displays and social media activities.SRMEC maintains a Center website, (https://srmec.uada.edu/) that highlights SRMEC/ERME programs and resources. The website promotes regional collaborations and partnerships that focus on risk management education outreach. The website also seeks input and stakeholder feedback. Communication with key stakeholders and clientele is accomplished through the use of the SRMEC direct calls, emails and listserv which is currently over 1,200 subscribers. Communications are periodically sent out to the listserv highlighting competitive grant program updates, notices of upcoming programs/trainings, as well as updates on the Center's website resources. As part of the Extension Risk Management Education program, http://extensionrme.org/, SRMEC actively promotes the national program website and the AgRisk Library to potential resource contributors and clientele.SRMEC maintains an on-going communication plan that strategically and intentionally seeks to connect with our clientele and stakeholders across multiple methods. The Center maintains on-going email engagement and promotion (848 subscribers) through a Constant Contact account leveraged to send out monthly communications. We have an established social media presence with over 400 followers on Facebook and Twitter in addition to our recently launched LinkedIn page. We strategically leverage multiple platforms to inform and celebrate our partners, stakeholders, and producers.

Target Audience:Participants across the meat and poultry processing value chain delivered through 3 state level projects (2 in North Carolina and one in Texas). Audiences targeted includedthe following: poultry producers, small scale livestock farmers veterinarians meat (beef, poultry, turkey)processoremployees third-party live haul company representatives. beef industry associations consumers Engagement with participants sought to develop and evaluate handling, transport and processing practices.The proposed effort seeks to target the meat and poultry processing sector--processors, workers, growers/ranchers--with educational projects that enhance the sector's capacity, performance and resiliency. Changes/Problems: Nothing Reported What opportunities for training and professional development has the project provided?North Carolina Meat Conference:The conference had643 SME participants from across the southeast and nation. The final program is uploaded in the educational section of this report, which includes 70 training opportunities when you include the 50+ concurrent trainings, farm tours, and hands-on meat fabrication. In addition to the print program, we utilized a conference app called "Whova" which provided even more opportunities for conference attendees to network and engage with one another throughout the event. Please see the Whova impact report in the evaluation section of this report. Where's the Beef?: Launched the online course in mid November 2024. This includes a blog post, YouTube video, Texas A&M AgriLife Today article along with social media postings to promote the resources and training. Virtual Training to Manage Animal Welfare Risks: Online module development is underway with content being derived from focus groups and surveys from participants across the turkey producer and processing sectors. 72 participants partipated in focus group discussions and train-the-trainer program which is ongoing. Three online training modules are in process and being refined. How have the results been disseminated to communities of interest?For this report only the North Caroline Meat Conference has been delivered.Since the project worked with so many audience members across the supply chain to cover topics relevant to farmers, buyers, distributers, educators, culinary professionals and industry folks, the conference held a series of focus tracks divided by topic. We also included special training for FFA Agricultural Teachers, Family and Consumer Science &Livestock Extension Agents, and Culinary groups. Conference Promotional Materials: In addition to our press release, social media, e-news, and partner outreach, we also received significant coverage on the event from local media. The Carolina Meat Conference is part of a meatsummits.com network of other land-grant and non-profit organizations interested in holding their own version of a risk management local meat conference. The majority of the Meat Summit Group board attended the Carolina Meat Conference and shared lessons learned for developing future meat conferences across the country. Specifically, we will be collaborating with the Midwest Meat Summit to be held in January 2025 in Iowa and the Black Belt Meat Summit to be held in April 2025 in Tuskegee, Alabama. As we did in the spring, we are holding a NY road tour first to try out the new content with our partners at Cornell the week of October 20-25th in partnership with their NRME grant. We are then applying lessons learned for our NC road tour scheduled Nov.3-8, 2024. That road tour will include the new processor directory and new additional content to keep the material fresh. The NC road tour will cover central NC to the south west of the state. This region is both new to our road tour list and enables us to conduct processor visits during the day for processor directory sign ups (see below). Collectively for all of the funded projecs, outreach activities are being promoted to the targeted project partipants to encourage participants to take the Beef online course and raise awareness of the upcoming virtiual training opporunity. SRMEC continues to monitor each projects socail media efforts and leverages the individual project actions to promote the processing program across the region and the country. What do you plan to do during the next reporting period to accomplish the goals?SRMEC will report on the fully completed online course offerings and track programmatic impacts and feedback from program participants. SRMEC will contiue to monitor the projects and collect success stories from the Caroline Meat Conference and their on-going Price-to-Market Trainings. The Centerwill continue to monitor the quarterly progress reports to capture project activities, outcomes and impacts.

Target Audience:SRMEC administers the grant funding and provides leadership across our regions to address local issues relevant to education and training opportunities for meat and poultry producers, processors, and distributors. The grant pool focuses supporting small-to-medium sized enterprises (SMEs) enhancement of sound risk management decisions. Targeted audience includes: educational institutions, farm, meat, and poultry organizations/associations, lenders, consultants, other risk management education providers. Changes/Problems: Nothing Reported What opportunities for training and professional development has the project provided?The awarded project contracts have been successfully executed and plans of work finalized. PIs begin initiating project activities in the Summer of 2023. How have the results been disseminated to communities of interest?The Extension Risk Management Education program worked collaboratively to announce the selection of the funded projects through a press release. The relase was shared with industry stakeholds and project's targeted audience. What do you plan to do during the next reporting period to accomplish the goals?As SRMEC staff monitor the implementation and delivery of the funded projects, the Center will seek opportunities to promote trainings and success stories through our Center's social media activites. Efforts are also underway to have a project director meeting to enhance collaboration and networking opportunities for the funded efforts.

Impacts
What was accomplished under these goals? SRMEC managed the release of an RFA, and administration of the review of the grant pool. A national evaluation panel was selected with equal representation from each region was selected to evaluate and select the funded projects. The reveiw process resulted in the selection of three (3) projects totally $443,173 in funding: Managing Risks Across the Small Meat and Poultry Supply Chain in NC: Innovative Tools, Technical Support, Coordination, and Price-to_Market Training for Long-Term Business Viability.
