Non Technical Summary
Food safety, nutrition and health are Farm Bill Priority Areas. The National Survey of Children's Health reports that youth living in small rural settings are more likely to be overweight than youth living in larger rural or urban communities. The incidence of obesity is high in minority populations, particularly among Hispanic children. The population of Iowa is primarily rural, with expanding numbers of minorities. The CDC reports Iowa ranks among the highest for rates of obesity for Hispanic (37.6%) and non-Hispanic Black (39.5%) adults. Evidence suggests that health-related information is more readily accepted when provided by persons of similar background. Within the disciplines of nutrition and dietetics the number of multicultural professionals has not kept up with changing demographics. Our long-term goal is to raise awareness of college degree opportunities within the fields of dietetics and nutrition among multicultural high school students in order to develop a pipeline for these professions. This goal will begin with recruiting and supporting 5 multicultural students enrolled in the dietetics or nutritional science majors in the Department of Food Science and Human Nutrition at Iowa State University. These Cyclone Scholars will be academically supported with tutoring for academic skills and leadership; mentored by peers and faculty; and participate in experiential learning through research, internships, conferences and international study. Regular small group events focused on personal and career development will provide additional support, and they will be engaged with outreach to their home communities to encourage multicultural students to enter these careers.

Goals / Objectives
Our goal is to train multicultural dietetics and nutritional sciences students to address the obesity epidemic among minority populations. Health care recipients report the highest level of satisfaction with care and trust when the service provider and recipient share their racial/ethnic background. We propose to train five students from under-represented groups in a trans-disciplinary manner using the socio-ecological model in either dietetics or nutritional sciences. Our innovative approach will include intense peer and faculty mentoring and academic support to: 1) develop self-efficacy in learning; 2) plan research; 3) engage in experiential, leadership and international opportunities tailored for each Cyclone Scholar; and 4) integrate professional and service learning activities. These supports are necessary to adequately address a common barrier identified by minority dietetics students -- navigation of the academic and financial support systems in higher education.
Project Methods
The program, including planning, assessment and reporting, will be managed by the Cyclone Scholars Supervisory Board comprised of the PD and Co-PD, the FSHN Academic Adviser/DPD Director, and diversity representatives from both the colleges of Human Sciences (CHS) and Agriculture and Life Sciences (CALS). Innovative aspects of the Cyclone Scholar academic plan include intense faculty and peer mentoring to ensure academic and social adaptation, required participation in research, competency in a foreign language, and planned internship and international study tailored for each Scholar. Grant funds will be used to purchase a laptop computer and printer for each Scholar in Year 1. Under the guidance of their faculty mentor, Scholars will select either dietetics or one of two nutritional science options (pre-health professional and research or nutrition and wellness). Each Cyclone Scholar will develop a 4-year plan in consultation with their faculty mentor to identify and define their experiential learning goals. Scholars will complete an undergraduate research experience with their mentor culminating in a poster presentation at ISU and/or a professional meetingby the summer of their third year. The summer following their freshman year, Scholars will be encouraged to apply for funding from one of several college or campus-sponsored research programs to continue research. Cyclone Scholars will be required to participate in at least 2 of the following activities each year: Student Dietetic Association, Nutrition Club, Iowa Association of Nutrition and Dietetic (IAND) annual meeting, ISU Career Fair, or an approved college or ISU organization. Scholars will be encouraged to accept leadership roles during their junior and senior year such as officer in Student Dietetic Association, Nutrition Club, student representative to IAND, College Student Council or Government of Student Body, representative on FSHN committee, or peer mentor for a Learning Community.

We have successfully maintained a cohort of 5 students. All the students are on track for completing their degrees as planned. Four graduated in spring 2019 and the fifth is on schedule to graduate in fall 2019. All of ths scholars have had successful academic careers including high academic performance, participation in extracurricular activities that enhance their career preparation, work and research experiences and at least one international travel experience.

Each student has identified a faculty mentor and three of them have been engaged in research projects. The other two plan to become involved with research in the coming year. All of the students completed a study abroad program in the past year, including one student who spent the spring 2017 semester studying in Italy.

        Target Audience:The target audience for this project are the 5 undergraduate students majoring in dietetics/nutritional sciences at Iowa State University. All students are making good progress in the studies. Changes/Problems:One of the Cyclone Scholars made the decision to transfer from ISU to a community college because of a family situation. Efforts were made to retain the student, but were unsuccessful. The opening will be filled with a currently enrolled junior that meets the program requirements. What opportunities for training and professional development has the project provided?All 5 students were engaged in studentorganizations within ISU and with their academic professions (ieAcademy of Nutrition and Dietetics and the American Society for Nutrition) during the academic year. Three of the students have volunteered for research projects with faculty. One student has completed an international study abroad program. Four students are undertakingsummer work experiences. All students attended monthly meetings with the supervisory committee.During these meetings, presentations were provided to the students to increase their professional skills including diversity and inclusiveness training, goal setting, and career planning. How have the results been disseminated to communities of interest?The Cyclone Scholars have been featured in news releases prepared by the department and college. These were made available through our websites. What do you plan to do during the next reporting period to accomplish the goals?Students will enter their junior year in fall 2017. During the academic year, they will continue to meet monthly with the supervisory committee with presentations to enhance their professional development. They will be required to engage in a research or professional development project and to complete their international experience. Ongoing academic mentoring will be provided by the supervisory committee and faculty mentors. Students will also be encouraged to take on leadership roles within campus and professional organizations.

All 5 of theenrolled students have completed their sophomore year and all are making goodacademic progress. One student left the program after completing the spring 2017 semesterand transfered to another academic institution due to a family situation. We are recruiting a new student to fill that opening.

          Target Audience:During the past year, Cyclone Scholars have engaged with target audiences in many ways. During the fall semester,Scholars had the opportunity to attend a lunch withworking professionalsfromhealth-related industries and to discuss career planning. All of the Scholars participated in clubs and extra-curricular activities where they gained leadership and communication skills, as well as interacted with students and faculty from different disciplines. Scholars were also encouraged to attend the College of Agriculture and Life Sciences Career Fairs and the College of Human Sciences Career Fairto meet potential employers and to discuss internship opportunities. During the semesters, Scholars attended monthly discussion groups where academic success skills were presented and discussed by experts in these areas. Changes/Problems:One of the Cyclone Scholars has decided to change her major and therefore will no longer be eligible for the program. We are actively recruiting a new student to fill this opening and anticipate no problems with finding a suitable student by the start of the fall semester. What opportunities for training and professional development has the project provided?Cyclone Scholars met once per month for an hour to participate in academic preparation discussions with experts in these areas. For example, we had 3 sessions during which the Scholars participated in activities to demonstrate bias and perception and two sessions to discuss managing stress. Faculty researchers were invited to give brief overviews of their work and to engage the Scholars in concepts of academic research. The Scholars were invited to have lunch with working professionals on two occassions to discuss career planning. How have the results been disseminated to communities of interest?We have included stories about the Cyclone Scholars in our departmental and college newsletters that are viewed by alumni and friends. What do you plan to do during the next reporting period to accomplish the goals?During the coming academic year, the Scholars will continue to meet monthly with the supervisory committee to further advance their professional skills with a focus on leadership. They will be encouraged to find a faculty mentor to begin working on a research project. Scholars will be supported and encouraged to engage in appropriate extracurricular activities that will enhance their communication and leadership skills. Academic progress will continue to be monitored by the supervisory committee as well.

          What was accomplished under these goals? This was the first year for the 5 Cyclone Scholars in this cohort and all have had a successful start to their academic careers. Each of the Scholars completed their coursework with GPAs above 2.5 (4 of the Scholars have GPAsgreater than 3.25). The students were actively engaged with the training programs we offered each month and reported these were helpful to them in making the transition from high school to college. The Scholars participated in Learning Community activities and a variety of clubs that enhanced their social interactionsand engagement with others. Scholars have been introduced to theresearch faculty through presentations at our monthly meetings and have begun to investigate and plan for their international study programs. At this point, all Scholars are on track with their academic program.
