To determine levels of compounds related to health, nutrition and quality in select tropical fruits.
Project Methods
Measure compounds in select tropical fruits related to health, nutrition and quality, such as ascorbic acid, pigments, flavonoids, pectin, sugars, acids and aroma compounds using liquid and gas chromatography/mass spectroscopy.

Progress 04/01/04 to 03/31/05

Outputs
4d Progress report. This report serves to document research conducted by the ARS Citrus and Subtropical Products Laboratory for a trust established with the Tropical Fruit Growers of South Florida, Nutritional and Compositional Information on Tropical Fruits, which is associated with in-house project Enhanced Fruit and Fruit Product Quality using Analytical/Sensory Methods to Improve Processing, 6621-41440-003-00D. Research included analyses of antioxidant potential, pectin/fiber content, flavor and pigments in select Florida-grown tropical fruits and has generated much interest in the nutritional value of these fruits. Presentations of this work have been given at several scientific meetings, and manuscripts are in progress.

    4. What were the most significant accomplishments this past year? D. Progress Report: Nutritional and Compositional Information on Tropical Fruits (mamey, starfruit, lychee, longan, papaya, guava, and others) This report serves to document research conducted under a trust agreement between ARS and the Tropical Fruit Growers' Association. The objective of the trust is to determine the amounts of various health related compounds and a survey of the flavor compounds in various tropical fruits grown in south Florida by small, family owned farms. This project is currently underway with fruit procured and methods being optimized. The information will be used by the Tropical Fruit Grower's Association and by its members for marketing of Florida grown tropical fruit as it relates to flavor and health benefits.
