Outputs OUTPUTS: Nutrition is the science in which biology, chemistry and social sciences meet to study and explain metabolic pathways for nutrients, therapies for diseases, and food habits and customs. Our Interdepartmental Graduate Program in Nutritional Sciences (IGPNS) has 7 Masters students and 26 PhD students. We conferred 5 PhD degrees in 2010 (Huebner, Gialamas, MacLeod, Frey, 1106 and Raines) and I MS degree (Joyce). Our undergraduate program had 260 students (107 in dietetics, 99 in pre-dietetics, 53 in natural sciences and 1 in international) in fall, 2010. We recently instituted a new requirement with GPA minimums for admission to our dietetics major which has enabled us to provide more focused instruction to students who are pursuing the highly competitive professional credential of "registered dietitian" (RD). In collaboration with the College of Agriculture and Life Sciences (CALS) International Programs and the Center for Global Health, the Department was awarded funds to develop a Certificate in Global Health. The directorship will be housed in Nutritional Sciences and the certificate administered by CALS. Several courses are in development including introductory core classes, international field courses and relevant public health experiences in the United States. In cooperation with UW-Extension, The UW-Madison Institute on Aging and other co-sponsors, we conducted a statewide conference on "Current Concepts in Nutrition and Aging" in September, 2010 and we collaborated with other members of WiPOD (Wisconsin Prevention of Obesity and Diabetes) and WI-PAN (Wisconsin Partnership for Physical Activity and Nutrition) to offer an interdisciplinary conference on in preventing obesity at the community level in June, 2010. Impacts The WiPOD-WI PAN collaboration has led to four grants with Nutritional Science faculty as co-investigators. Three of the grants support IGPNS graduate student research, as follows: 1) A School of Medicine and Public health grant to study socio-economic influences on rates of obesity in Hispanic children in a charter school in Milwaukee, 2), a CDC grant to evaluate the impact of farm-to-school programs on knowledge, attitudes and consumption of fruits and vegetables, and 3) a pilot study of the influence of a 10-week summer gardening project on the fatness and fitness of overweight and obese children. As evidenced by the publications below, our Department conducted original research in community nutrition, nutritional epidemiology, diabetes/obesity prevention and treatment, mineral metabolism, nutritional interaction with intestinal function, metabolism of vitamin A and other vitamins. For example: Studies in the Yen group revealed that the triglyceride synthesis enzyme MGAT2 regulates energy expenditure in response to meals. David Nelson, an IGPNS post-doctoral trainee , has been invited to give an oral presentation of these findings at the Experimental Biology national conference in 2011. Professor Ney's research with glycomacropeptide (GMP) to improve the diet required for phenylketonuria (PKU) has resulted in the successful introduction of a commercial formula containing GMP, BetterMilk by Cambrooke Foods, for those with PKU in the United States. The Eisenstein group further elucidated how iron metabolism is controlled through selective expression of key proteins involved in iron metabolism. Professor Lai's epidemiologic research on the effects of nutrition on the onset and progression of pediatric chronic diseases began in the area of cystic fibrosis and has expanded to asthma and obesity. Professor Schoeller's group showed that when rats exercise before a meal, their amount of fat that is stored in the body's adipose tissue is reduced. This supports the value of exercising before breakfast. Awards: NUTRITIONAL SCIENCES is one of 5 doctoral programs in the UW-Madison College of Agricultural and Life Sciences that rank in the top 15 percent in their respective fields, according to the National Research Council's "Data-Based Assessment of Research-Doctorate Programs in the United States." These national rankings are based on 20 characteristics including research productivity, interdisciplinary connections, degree completion rates and student demographics. Denise Ney received the College of Agricultural and Life Sciences 2010 Spitzer Excellence in Teaching Award for her outstanding contributions to teaching and instruction. James Ntambi received the UW-Madison Chancellor's distinguished teaching Award for 2010. James Ntambi was inducted into the Uganda National Academy of Sciences. Susan Smith was elected President of the national Fetal Alcohol Spectrum Disorders Study Group. Susan Smith was awarded U.S. Patent 7,838,561, "Method for Preventing or Treating Cardiac Hypertrophy."

Our undergraduate program graduates for 2009 include 60 BS degrees in dietetics and 12 in nutritional sciences. In cooperation with UW-Extension, The UW-Madison Institute on Aging and other co-sponsors, we conducted a statewide conference on "Current Concepts in Nutrition and Aging" in September, 2009 and we collaborated with other members of WiPOD (Wisconsin Prevention of Obesity and Diabetes) to offer an interdisciplinary conference on "production and consumption of whole food" in October, 2009. Impacts As evidenced by the publications below, our Department conducted original research in community nutrition, nutritional epidemiology, diabetes/obesity prevention and treatment, mineral metabolism, nutritional interaction with intestinal function, metabolism of vitamin A and other vitamins. For example, David Eide's group discovered that the expression of many genes change in response to zinc status and these genes are involved in maintaining zinc levels within cells as well as allowing cells to adapt to the stresses that result from zinc deficiency. Roger Sunde's lab has used microarray analysis to identify several new highly-regulated selenoprotein mRNAs in mice that can be used as molecular biomarkers of selenium status, and used mRNA levels and selenoenzyme levels as biomarkers to report selenium status and selenium requirements in growing rats, old rats, and growing turkeys. Rick Eisenstein's lab has identified new ways in which cell adapt to iron deficiency through hierarchical control of the expression of proteins that control the uptake and metabolic fate of iron. Dr. Susan Smith's lab has isolated a protein called beta-catenin as an important target of alcohol's toxicity in the developing brain. They have also demonstrated that a moderate iron inadequacy in the mother can magnify alcohol's damage to the developing brain. The Schoeller lab has continued to investigate the relative roles of physical activity and energy intake in the increase in the rates of obesity in the US and elsewhere throughout the world. Through their work with the doubly labeled water method for measurement of total energy expenditure, they and others have demonstrated that excess energy intake is the primary driver of excess weight gain. They have also demonstrated, however, that reduced physical activity contributes to excess energy intake by reducing the accuracy of the homeostatic mechanisms controlling fat storage leading to small increases in body fat. Eric Yen and colleagues recently reported that MGAT2 is a key determinant of energy metabolism in response to dietary fat and that inhibiting this enzyme may prove to be a useful strategy for treating obesity and other metabolic diseases associated with excessive fat intake. Eric Yen's group is now studying the underlying mechanisms. Susan Nitzke's research is highlighted by a multistate research project to improve young adults' health behaviors in three key areas -- nutrition, physical activity, and stress management.

Outputs OUTPUTS: Our Interdepartmental Graduate Program in Nutritional Sciences has 5 Masters students and 26 PhD students. We conferred 9 PhD degrees in 2008 and 3 MS degrees. In cooperation with UW-Extension, The UW-Madison Institute on Aging and other co-sponsors, we conducted a statewide conference on "Current Concepts in Nutrition and Aging in September, 2008. Several faculty are involved in international programs including a public health partnership in Uganda, where James Ntambi's work (joint professor with Nutritional Sciences and Biochemistry),earned the UW-Madison College of Agriculture and Life Sciences Arhur Maurer Extra Mile award in 2008. Impacts As evidenced by the publications below, our Department conducted original research in community nutrition, nutritional epidemiology, diabetes/obesity prevention and treatment, mineral metabolism, nutritional interaction with intestinal function, metabolism of vitamin A and other vitamins. For example, David Eide's group discovered that the expression of many genes change in respose to zinc status and these genes are involved in maintaining zinc levels within cells as well as allowing cells to adapt to the stresses that result from zinc deficiency. Denise Ney's phenylketonuria research has contributed to the development of a whey protein that expands the dietary choices of children and adults with this inborn error of metabolism. Susan Nitzke and collaborators have developed a website that helps dietetics students throughout Wisconsin find practicum experiences to help prepare them for future careers in nutrition. James Natmbi's group found that mice without a spedivic gene resist obesity, diabetes and fatty liver disease. Susan Smith's lab has discovered new roles for vitamin A in the adult heart.
