An IFT symposium in July 2004 pointed out that the retail-food service industry is not fully aware of academic research and outreach capabilities. And, academic professionals are not fully aware of the needs of the retail-food service industry with respect to food safety. Stakeholders in retail and food service food safety need more collaboration between academic research and outreach and the retail-food service industry.

Goals / Objectives
This conference will help integrate food safety research and outreach in the retail and food service industry. The first goal is to enhance networking across boundaries. These boundaries include industry-academia, scientific associations (IFT, IAFP, CFP, NEHA, etc.), and geographical boundaries. The second goal is to enhance collaboration in research and promote the sharing and use of sound science. Lastly, the third goal is outreach --sharing resources and educational materials. Each of these three goals comprises a section of the Conference.
Project Methods
To respond to the need for strengthened ties between academia and the retail-food service industry a conference has been created.

Outputs
OUTPUTS: The "Collaborating Across Boundaries in Retail-Foodservice Food Safety" Conference was held Nov 1-3, 2006 in Las Vegas, NV. Retail Food Safety professionals from twenty-six different states representing five land-grant universities, five national science associations (IFT, IAFP, AFDO, NEHA, and CFP), sanitarians, media, a consumer group, CFSAN, CDC, and several industry members attended. Three main topics related to retail food safety were discussed: collaborations, research and education. PARTICIPANTS: Retail Food Safety professionals from twenty-six different states representing five land-grant universities (Clemson, Purdue, Utah Sate Univ., Rutgers Univ., and Univ. Arkansas), five national science associations (IFT, IAFP, AFDO, NEHA, and CFP), sanitarians, media, a consumer group, CFSAN, CDC, and several industry members participated. TARGET AUDIENCES: The target audience was food safety professionals. This audience has the greatest impact on retail and food service operators who are the front line of food safety in grocery stores and restaurants. The project indicated success in developing more collaboration between the different groups of food safety professionals. PROJECT MODIFICATIONS: Nothing significant to report during this reporting period.

Impacts
A conference evaluation and survey prioritized issues in three areas: collaborations, research, and education. All participants agreed that more collaborations and networking would benefit stakeholders. The participants formed the Retail and Food Service Food Safety Consortium directed by Utah State University. Participants gained new awareness of retail food safety activities being performed by others. During the conference, in evaluations and in surveys, participants indicated a motivation to continue this collaboration. The conference succeeded in identifying research and educational needs of stakeholders. Details were documents in a Proceedings of the conference. This collaboration has continued into new USDA CSREES projects.

All participants agreed that more collaborations and networking would benefit stakeholders. The participants agreed to form the Retail Food Safety Consortium with a goal of continuing collaborations. In the area of research, the participants agreed more needed to be done to define and prioritize retail and foodservice research needs. And, those needs should be communicated to all stakeholders. Lastly, in the area of education, participants desired to share materials more to avoid duplicating efforts, especially in the area of training courses and non-English materials.

Impacts
Participants gained new awareness of retail food safety activities being performed by others. During the conference, in evaluations and in surveys, participants indicated a motivation to continue this collaboration and be part of the Retail Food Safety Consortium. A Proceedings is being written to capture consensus opinions and priorities for collaboration, research and education in retail food safety.
