Outputs Cultural food practices and their nutritional implications have been the key underpinnings of this project. The initial project title focused on Vietnamese and Vietnamese-Americans, but due to political difficulties no field-work was conducted in Vietnam. Research focused on a ethnic groups living in California, among them Native Americans in rural settings and in urban Sacramento, as well as Vietnamese-Americans and Hmong-Americans living in central California. Traditional foods were collected and key species analyzed. Work was conducted on determining maintenance or abandonment of traditional Native American and Asian medical-nutritional practices. Factors that facilitated or hindered access of Native Americans to medical care and to California and federal nutrition programs were identified. Dietary patterns and use of traditional culinary and medicinal herbs by Hmong-Americans were investigated. Nutrition analysis of traditional Hmong herbs was completed. Archive
research on the history and medicinal uses of chocolate and wine were begun during the project; wine-related information was completed, the chocolate/medical association work continues. Field work on dietary practices and cultural uses of chocolate was initiated among Mixtec Native Americans living in central California. Research on cultural uses of key foods in American history was completed during the project. During the latter project years research was conducted and completed on identifying traditional dietary practices of Vietnamese-Americans during pregnancy and lactation.

Outputs Research has been completed on the cultural-history of key American foods; seven reports have been published, four remain in-press. Fieldwork has concluded in the United States on identifying traditional dietary practices of Vietnamese-Americans during pregnancy and lactation. This research is being prepared for publication. Research on food procurement practices of California Hmong has concluded; two articles have been published. Hmong dietary/botanical data were presented at the International Society of Ethnobiology, 9th Congress, held in Canterbury, England, June 13-17, 2004. Fieldwork on edible wild plants in northern Thailand and use in maternal diet has concluded; two articles have been published. A book-length manuscript on themes in cultural nutrition, with special attention to nutritional issues in ethnic minority populations, was published in 2004. Research on medical uses of chocolate continues.

New field sites for the study of edible wild plants have been developed in Israel/West Bank at Bethlehem, and in rural eastern Nigeria at Maiduguri; field work in Nigeria will begin in February, 1998, while field work in Israel/West Bank will be initiated in July, 1998.

Populations of resettled Hmong living in central California have been identified and data collection has begun on food procurement practices of Hmong living in Sacramento. Field sites in Viet Nam have been identified in the Northern Highlands for the study of vitamin A and Iodine deficiency, and field work is scheduled to begin June, 1997. Research on the trace mineral analyses of key species of edible wild plants in West Africa (Burkina Faso) has been published. A new field site for the study of edible wild plants in rural Nigeria has been identified in the Jos Plateau, and field work is scheduled to begin June, 1997. Cultural practices associated with American elite, Olympic athletes have been completed and
presented in Washington, D.C. Some of the data on Olympic athletes have been published; other data are in press.

Opportunities for collaborative research on Vietnamese and Vietnamese-American diet and nutritional status have been developed and initial work published. Comparative populations of resettled Hmong living in Vietnam and in the Central Valley of California (Merced and Sacramento) are being investigated. This research should lead to the development of improved nutritional education materials for this group of Southeast

Outputs Field work has been completed in Round Valley, California, on food patterns of Native Americans regarding factors that facilitate or hinder access to medical care and to state and federal nutrition programs. These data are being summarized. Field work will be initiated spring, 1994, on urban Native Americans living in Sacramento and Oakland-San Francisco regarding access to state and federal nutrition programs. Work continues on identifying and evaluating scientific validity of traditional Indian and Chinese medical-nutritional practices. This research should lead to the development of improved nutrition education materials for ethnic minorities within California. Field research has been completed on West African carotene-rich plant species and their nutritional role during drought. Laboratory analyses of key species will be completed by 1995. Food and nutrition-related projects have been reviewed and approved by representatives of the government of Vietnam for the
purpose of improving dietary patterns of Vietnamese and Vietnamese-Americans. Specific topics of mutual interest identified include: Food resources and nutritional quality of diet in Vietnam and comparison with food patterns of Vietnamese-Americans, food safety, and nutritional geography.

Outputs Collaboration continues with Eunice Romero-Gwynn and Roger McDonald on elderly Hispanics and dietary change. Data have been collected on recent immigrants and first generation California Hispanics. Special attention has been given to maintenance or abandonment of food practices, especially foods high in sodium and saturated fats. Nutrition-related research has been initiated in round Valley, California, on food patterns of Native Americans and factors that facilitate or hinder access to medical care and to state and federal nutrition programs. Work continues on identifying and evaluating scientific validity of traditional Indian and Chinese medical-nutritional practices. This research should lead to the development of improved nutrition education materials for ethnic minorities within California. Research has begun on west African carotine-rich plant species and their nutritional role during drought. Potential food and nutrition-related projects are under discussion
with representatives of the government of Vietnam for the purpose of improving dietary patterns of Vietnamese and Vietnamese-Americans.

During the reporting period nutrition-related research was initiated on Native Americans at Round Valley, California. Objectives are to compare urban and rural factors that determine access to health care and nutrition education programs within California. Work continues on identifying and evaluating scientific validity of traditional Indian and Chinese medical-nutritional practices. New research is planned on the nutritional status of elderly Hispanics of
