Non Technical Summary
This project is designed to develop and strengthen distance education capabilities for animal science and related fields through their involvement in experiential learning and outreach activities. An Online Educational Animal and Food Sources Program (UPRM-AFSDEPI) will be created to provide distance education technologies (DET) option for our current student population and future clientele on the importance of food producing animals for human beings. For each year of the proposed distance educational proposal, six junior or senior undergraduate students will each develop on educational material (modules) suitable for K-6 and K-12 students. The creation and development of the modules will be supervised by faculty mentors. During this three-year proposed project, a total of 36 online education modules will be develop, 18 directed to K-6 students and 18 to K-12 students. Each year of the proposal, selected students will be trained to create and develop two educational modules, one for each audience (K-6 and K-12 students). In year one, the proposal educational project modules will be oriented to milk and dairy products. Year two and three, educational modules will be oriented to eggs and meat production and nutritive value, including value add products and its importance in healthy human diets. Every year, during student training, two introductory modules will be developed by Faculty mentors as example for participating students. Webinar of the modules will be presented for the participating students to K-6 and K-12 students from 20 private and 140 public schools. With this webinars K-12 students will be able to know where animal food sources come from and its importance in the human diet. Additionally, it will enhance the number of Hispanic students pursuing a career in animal science and food related fields by increasing early awareness at K-6 level. Based on the above, the present proposal addresses the purpose and priority of "Leadership Skills Development of the DEG Educational Program", including the development and reinforcement of the necessary soft skills and DEG teaching applications in animal science and related field

Project Methods
The Online Educational Animal and Food Sources Program is designed to train undergraduate students in the development and presentations of online educational modules related to animal and food sources directed to K6 and K12 clientele.For each year of the proposed distance educational proposal, six undergraduate students will each develop on educational material (modules) suitable for K-6 and K-12 students. The creation and development of the modules will be supervised by faculty mentors. On year one of the proposal educational project modules will be oriented to milk and dairy products. On year 2 and 3 focus of the modules will oriented to meat, and eggs production and its nutritive value, including its importance in healthy human diets. Three introduction modules per year will be developed as example for Faculty mentors during the students training that will include the use of graphic programs (power point, publisher) and academic plataforms (ei. Moodle, Meet-google). Introduction education modules will include topics such as: 1) How important are animal food sources to the food security of our island, 2) Dairy goats for food security, 3) Before the supermarket: where do beef, pork and eggs come from? 4) Healthy human diets, food and nutrients for humans.A web page and social media accounts (Facebook, Instragram) will be created to publish all activities and publication s related to the project.

Impacts
What was accomplished under these goals? The project objectives include 1). Create the Online Distance Educational Animal and Food Sources Program directed to students attending private and public schools, 2) Train undergraduate students in the development of online educational modules related to animal and food sources directed to K-6 and K-12 clientele, and 3) Presentation of educational modules on-site or via webinars for students attending public and private schools. In the second year of the educational grant; to accomplish objective 1, The Online Distance Educational Animal and Food Sources Program have been updated to provide DET options for our current student population and future clientele on the importance of food-producing animals for human beings. Information about the program is available on social media. For objective 2 of the proposal, twelveundergraduate students have been developed on educational material (modules) suitable for K-6 and K-12 students. Similar to previous years, faculty mentors supervised the creation and development of the modules. During the last yearof the project, a total of 12 online education modules were created,8directed to elementary and middle students and 4 to high school students. The educational videos are presented on the PR-GOSHEPI program website https://www.uprm.edu/sea/pr-goshepi? and PR-GOSHEPI YouTube Channel. Objective 3 of the proposal consists in the presentation of educational modules for students attending public and private schools. Last year, Videos have been presented to 8 elementary or high schools located in the western half of the island impacting 240 students.

The present proposal looks to establish and consolidate key strategies to increase the knowledge in developing instructional materials using Distance Education Technologies (DET) and soft skills in animal science and related fields students. Likewise, our participating undergraduate students have the opportunity not only to create educational modules related to food and animal sources but also to present their developed products to K-6 and K-12 students attending public and private schools DET. The project objectives include 1). Create the Online Distance Educational Animal and Food Sources Program directed to students attending private and public schools, 2) Train undergraduate students in the development of online educational modules related to animal and food sources directed to K-6 and K-12 clientele, and 3) Presentation of educational modules on-site or via webinars for students attending public and private schools. To accomplish objective 1, the Online Distance Educational Animal and Food Sources Program was created to provide DET options for our current student population and future clientele on the importance of food-producing animals for human beings. Information about the program is available on social media. Objective 2 of the proposal, is to train undergraduate students in the development of online educational modules related to AFS directed to K-6 and K- 12 clientele. In year 1 and 2 of the distance educational proposal, nine undergraduate students have been developed on educational material (modules) suitable for K-6 and K-12 students. Faculty mentors supervised the creation and development of the modules. During the initial two years of the project, a total of 20 online education modules have been developed, 12 directed to elementary and middle students and 10 to high school students. Examples of online educational modules created are; "Dairy Goats," "Fresh Cow Milk," "Sheep for Milk Production", "Milk for Ice Cream," "Piglet for Christmas," "Sheep, Goat, Cattle, and Swine Breeds for Meat Production," "Small Ruminant Meat Production," and "Pork Meat." There was also a video called "Cattle: Edible and Inedible Products." Milk production modules for K-10 to K-12 audience include "Milk Our First Food," "Milk Synthesis and Mammary Gland Anatomy," "Is Milk Good for You?," "Dairy Products," "Goat Milk," and "Types of Cheese." Educational modules on meat production for the same audience include "Is Meat Good for You?", "Farm to Table Meat," and "Small Ruminant Meat." The educational videos are presented on the PR-GOSHEPI program website https://www.uprm.edu/sea/pr-goshepi? and PR-GOSHEPI YouTube Channel. Objective 3 of the proposal consists in the presentation of educational modules for students attending public and private schools. Videos have been presented to 12 elementary or high schools located in the western half of the island impacting 360 students.
